Kunafa

Ingredients:

  • 500 grams of Kunafa pastry
  • 1cup cup of sweet butter, melted and cooled
  • Syrup

Cheese filling:

  • 2 tablespoons of granulated sugar
  • 1 teaspoon of rose water
  • 500 grams of Arisheh or Ricota cheese


Step by Step:

  1. Prepare the syrup before starting to make the Kunafa (Few hours) and keep cool.
  2. Combine all the cheese filling ingredients and keep it aside.
  3. Preheat the oven to 350 F
  4. Spread the Kunafa pastry on your working surface, seperating threads and discarding any coarse strands.
  5. Moisten the pastry with half of the butter, rubbing gently to evenly coat all threads.
  6. Line a buttered baking dish with half of the pastry pressing gently the dough into the pan.
  7. Spread with the cheese filling, smoothing evenly.
  8. Cover with the remaining pastry.
  9. Top with the remaining melted butter, and pat down firmly.
  10. Bake for about 45 - 55 minutes, until the pastry seems light brown.
  11. Pour the cool syrup over the Kunafa immediately (while hot).
  12. Cut the Kunafa into squares and serve hot.
